In the state of CT, are restaurants required to sterilize their water/wine glasses?
I was in a very good Italian restaurant today and was horrified to watch how the bartender wash the wine/water glasses. They had two sinks one filled with soapy water and one with clean water, and whenever the dirty glasses came in, the bartender just dunked them in the soapy water and shook them a bit, then plunge them in the clean water and shook and rinsed a few seconds and put them back up on the tray for the next customer who order the drinks. Is this the standard way of cleaning glasses for restaurants? I came from a country that used to have a lot of street vendors that practiced this kind of "cleaning method" and this was over 35 yrs ago when Taiwan was considered a "developing" country and it was also when people got easily infected with illnesses like hepatitis, stomach flu, etc...
